Spicy Beef & Spinach Tortilla Pinwheels



Fry minced beef in a little oil for 5 mins

Add Italian herb seasoning & chilli powder to taste & fry for 10 mins

Add tomato & basil sauce & a dollop of red pesto & cook until the liquid has reduced & the meat is quite dry

Spread the spicy beef all over the tortillas in a thin layer.  Roll up like a swiss roll.

Spread a layer of tomato & basil sauce over the base of individual oven proof dishes

Cut each roll into 8 pinwheels & place cut face up in the dishes (8 pinwheels per portion)

Cover the pinwheels with Béchamel sauce

Sprinkle with grated cheese & bake until piping hot & bubbly.
