Heat 1tbsp of oil in a pan. Slice the chicken fillets into thin strips and add to the pan. While the chicken cooks, dice the chorizo, then add to the pan and fully cook through. Grill or microwave the flatbread until cooked - they should be hot, but still soft and pliable in consistency. Lay the bread flat, then fill with the cooked chicken and chorizo, sliced red onion, shredded carrot and chopped coriander. Drizzle with hot sauce to finish.
