.Place pucks evenly spaced on a lined baking tray and bake for 15-17 mins at 170°C/GM3. Remove from oven and allow to cool. Scoop ice cream into a ring and mould into shape. Sandwich between two cookies and serve garnished with mint sprigs and chocolate shavings.
