Potato Gnocchi with Piquillo Peppers

Ingredients:

Directions:

In a hot pan gently warm the peppers with crushed chillies and chopped tomatoes. Heat the gnocchi in boiling water and drain. Add gnocchi and spinach to the tomato sauce, finish with basil and serve in a warm bowl topped with dairy free cheddar.
