Prosciutto wrapped Croquettes

1. Deep fry croquettes until golden, this can be done in advance.
2. Wrap croquette in prosciutto and place on a baking sheet. Bake at 190°C/GM5 for 10-12 minutes until prosciutto starts to crisp.
3. Warm salsa gently and serve in dish topping with croquettes
4. Finish wit basil oil and basil leaf garnish
