Place chick*n fillets on a baking sheet and cook in an oven set to GM5/190°C for 22-25 minutes until piping hot in the centre. Heat sugar and vinegar in a pan until sugar dissolves, peel and slice onions place in a bowl and cover with pickling liquid, leave to pickle. Finely chop dill and mix with mayonnaise, finely shred lettuce and mix with mayonnaise reserving some for use later. Slice gherkins lengthways.
Assembly – Lay one slice of bread on a work surface and top with lettuce, pickled red onions, chick*n fillets and sliced gherkins. Add a layer of crisps and finish with a slice of bread smothered with dill mayonnaise.
