Defrost pizza puck and allow to prove. Fine dice vegetables and slice mushrooms. On a floured work surface roll out pizza puck into a rectangle. Spread with sauce and top with vegetables and vegan cheese. Roll tightly, chill then cut into equal pieces. Arrange on baking tray or place muffin tin. Cover and leave to prove. Bake for 15-20 minutes, remove from oven and serve.
Top tip: Brush with basil oil (051133) just before serving to add a glaze
