Defrost BBQ jackfruit, pour into a baking tray and place into a hot oven set at 180°C/GM5 for 25-30 minutes, stirring occasionally, until slightly charred. Meanwhile core and grate the apple, finely shred red cabbage and mix with grated carrots. Squeeze lime juice into a bowl with sugar and allow sugar to dissolve then pour over slaw mix along with chopped coriander, allow to pickle for about 10 minutes. Warm the bun. Place coriander leaves on the bun base, spoon over BBQ jackfruit and finish with pickled slaw mix. Top with bun lid and serve
