Chicken & Cauliflower Burrito Bowl



Coat chicken breast with Cajun seasoning and griddle until cooked then set aside and cool. Defrost avocado slices. Meanwhile grate, cook and cool cauliflower rice. Roughly chop fresh tomatoes. Mix black beans with sweetcorn. Arrange ingredients in bowl starting with cauliflower rice then add sliced chicken. Top with beans & corn mix and add tomatoes and avocado slices. Garnish with fresh coriander and a wedge of lime
