Nduja Scrambled Egg

Ingredients:

Directions:

Gently fry the Nduja paste until staring to become darkened and crispy. Mix eggs with milk and season to taste. Add butter to a pan and allow to gently melt on the lowest heat possible then add egg mixture. Cook as slowly as possible stirring all the time, making sure the egg doesn’t catch on the bottom of the pan. Once the eggs are softly set and slightly runny in places remove from heat and add the nduja. Serve on toasted buttered bloomer with scorched cherry tomatoes and strips of chives.
