Place port in a pot with some sugar and reduce until a thick syrupy liquid is left, allow to cool slightly and put into a squeezy bottle. Sprinkle mozzarella over the pizza base and bake in a hot oven until cheese is melted and turning golden. Top with sliced chorizo and pinches of Nduja paste, return to oven to allow to warm slightly.
Assemble – Remove pizza from oven and place on a board, starting at the centre swirl the port reduction around the pizza. Top with grana Padano shavings, mixed Microcress and a sprinkling of smoked sea salt
