Purple Pineapple Meatless Meatballs with Noodles

Ingredients:

Directions:

Cook the noodles, drain and toss with a little sesame oil. In a pan warm the meatballs up with a splash of water to loosen. Add some sliced yellow pepper, chopped pok choy and edamame to the pan. Just before serving add a handful of beansprouts, fresh chopped coriander and some chopped fresh chilli. Serve with a little chilli, carrot and mouli salad with nigella seeds.
