Thai Chicken Buddha Bowl

Ingredients:

Directions:

Cook quinoa as per packet instructions (about 20 mins). Dice chicken and brown in pan, add satay paste and mix well, add some water and cook until sauce thickens. Place quinoa, kale, red cabbage, beansprouts and carrots in a bowl. Top with cooked chicken and garnish with chopped coriander and lime wedge.
