Directions For Use
1. Take the dough balls out of the bag and place them into proving trays, leaving space between the balls. 2. Place the tray or trays into the chiller for at least 8 hours, until fully defrosted. 3. Remove from the chiller and leave to prove in an ambient temperature (18 to 24 ̊C) for 30 – 45 minutes. The dough is ready to pin when the dough ball is approximately 50% larger and that you can press the dough down with your fingers and the dough springs back. 4. Sprinkle plain flour over a flat clean working surface and using a scraper, lift the proven dough balls onto the floured surface. Flatten the dough ball with your flattened fingers, turning from side to side until you have a disk of the appropriate size. 5. Shake off the excess flour by briskly moving the disk around in your hands, which in turn will increase the base to one of about 25 cm in diameter, now place in your pizza pan or slide onto your peel. 6. Top and bake in the oven at 280 ̊C–300 ̊C.
