Stretch the pizza base to about 12”. Place onto the pizza paddle, lightly dusted with flour. Spread the hoisin sauce over the base. Top with the mozzarella cheese, shredded duck meat, red onion and courgette ribbons. Cook the pizza in a hot oven until the base is crisp. Place onto a pizza plate, top with the shredded spring onions, coriander, red chilli and a sprinkling of sesame seeds.
