Cheese & Bacon Hasselback



Cook potato

Chop up 2-3 slices of streaky bacon and grill or fry until crispy. Fill the potato ridges with bacon and cheddar slices, then sprinkle more bacon and grated red Leicester on top. Return to grill for 2-3 minutes, until cheese has melted. Remove from heat, then top with soured cream and sliced chives.
