Falafel Flatbread



Pre heat oven to GM5/190C. In a small bowl mix cumin, ground coriander, cinnamon, turmeric, black pepper, garlic powder, lemon juice and olive oil with boiling water. Pour over cous cous and raisins. Cover with clingfilm and leave to stand for 10 minutes. Once soaked and cooled slightly, fluff up the grains with a fork. Cook Falafel on a baking sheet for 12 minutes until crisping. Meanwhile half cherry tomatoes and thinly shred the lettuce and red onion. Warm the flat bread under a grill and pack into serving vessel. Pack in lettuce and cous cous then add falafel and olives.

Sprinkle with sliced red onion and serve with griddled halloumi
