Pickled Cucumber with Chilli

Dice garlic and chillies, add to a bowl with rice vinegar, caster sugar and sesame oil. Cut cucumber into ribbons using a vegetable peeler, add to pickling juice and allow to pickle for a few minutes.

Chilli and Mango Salad

Make dressing by adding all ingredients to a bowl and mixing well, leave to one side. Meanwhile finely slice red onion and pepper, cut mango into strips, slice spring onion on an angle and chop coriander and mint. Add everything to the dressing along with the chopped nuts and toss well.
