Moqueca Prawn Stew



Place defrosted prawns in a bowl with 2 tbsp lime juice, 1 tsp salt and 1 tbsp chopped garlic. Cover and chill for 1 hour. Heat some cooking oil in a large saucepan, add onion and fry for 5 minutes, then add red pepper, chilli flakes, paprika and garlic.

Pour in tomatoes, coconut milk and a pinch of salt. Bring to a simmer and allow to reduce for 10 minutes. Add the prawns with the marinade and gently simmer for about 3 minutes until prawns turn white. Serve with fresh coriander, chopped chillies and cooked rice.
