Peel and quarter Brussel sprouts, leaving a few outer leaves soaking in water for later. Finely shred cabbage, red peppers and carrots. Mix with sweet chilli sauce and leave to macerate. Make a light batter using the batter mix and chilled sparkling water. Quarter Brussel sprouts and pan fry in oil until charred and slightly softened. Drain sprout leaves, coat in flour, dip in the batter and deep fry until golden and crispy. Warm buns by steaming or heating in a microwave for about 30 seconds per bun. Fill with slaw, charred and battered sprouts, garnish with sliced red chillies and parsley.
