Chicken & Mango Quesadillas

Arrange 8-10 mango chunks on one half of the tortilla alongside 6-8 strips of cooked chicken, 5-6 avocado slices, a liberal handful of grated cheddar and a dollop of salsa. Leave around 1cm at the edges of the tortilla. Fold wrap in half to create a half-moon shape, then flatten and cook on contact grill or panini machine for 3-4 minutes, ensuring core temperature inside is hot. Remove from grill and slice wrap in half, then brush with olive oil and sprinkle with smoked paprika.
