The Chorizo Burger

Heat the oil in a pan, finely dice onion and fry in the pan until soft. Add crushed garlic, chopped tomatoes, tomato purée, sweet paprika, chilli powder, sugar and a pinch of salt, then bring to the boil, stirring occasionally. Lower to a simmer and cook for 10 mins until pulpy. Cook the burger as per instructions. Shred iceberg lettuce, finely slice red onion and avocado. Once burger is almost cooked, toast bun and deep fry the chips. Spread a thin layer of the tomato sauce on the base bun, top with shredded lettuce and piquillo peppers then add the burger, cheese, sliced chorizo and avocado. Spoon some sauce over the burger then top with bun. Serve with hot fries and some of the sauce on the side.
