Vegan Cumberland Sausage with Sweet Potato Mash



Place sweet potatoes onto a baking tray and bake an oven set to 180°C for 25-30 minutes until soft in the centre. Meanwhile bake sausages and cook the vegetables until al dente. Remove potatoes from oven and allow to cool slightly before scooping the flesh from the skin and mashing with garlic puree, a knob of butter, cumin and maple syrup. Place mash in a bowl and top with sausages, finish with caramelised sliced red onion, blanched greens and dribbling of gravy.
