Melt the butter in a saucepan, stir in the flour then trickle in the milk a little at a time, stirring constantly, until thickened. Add the cheese and stir until melted. Season to taste, add the nutmeg then set aside. Add olive oil to a frying pan along with the bacon and 4 tomato slices, cook for about 5 mins, turning regularly, until the bacon is cooked through, set aside and keep warm. Slice bread and toast on both sides.
Assembly - Lay slices of toast in an ovenproof dish, top with the turkey and uncooked tomato slices. Spoon over the cheese sauce, then grill until bubbling. Remove from dish, place on a board, cut into two and top with the cooked tomato and bacon. Finish with a sprinkling of chives
