Leftover Roast Beef Hash



Cut part boiled potatoes into even chunks and roughly dice peppers and red onion. Slice leftover beef into strips. Add oil and butter to a thick bottomed pan and heat over medium heat until butter bubbles. Add potatoes, onions and peppers, cook until potatoes begin to crisp on the edges then add strips of beef and stir well. Leave, undisturbed, on medium heat until the base potatoes begin to crust but not burn. Meanwhile gently poach an egg and warm hollandaise sauce. Once everything is ready place the hash on to a plate and top with the egg, finish with a dribble of hollandaise sauce and chopped chives. Serve extra hollandaise on the side.
