Grill or fry the bacon until crispy – this should take about 4-5 minutes. Heat up the pancakes as per pack instructions, then stack up with smashed avocado, bacon and crumbled feta. Garnish with chopped parsley.
For the sweet option, layer up the pancakes with a liberal dollop of the fruit mix, then drizzle with maple syrup to finish.
We've used ready-made pancakes for this recipe for speed of service. However, it works just as well with home-made pancakes!
