Seared Cod Loin in Oyster Sauce



Whisk the marinade together using the Oyster Sauce (2 tbsp), Light Soy Sauce (1 tbsp), Sesame Oil (1 tbsp), Ground Ginger (2 tbsp) and Star Anise (x2).

Pour the marinade over the Cod Loins (x4) and leave for at least one hour. Heat a little Sesame and Sunflower Oil together in a sauté pan. Once hot, seal Cod Loins on all sides then place in a moderate oven for approximately 4-5 minutes or until just cooked.

Remove from pan and allow to rest. In the same pan, fry the Wok Veg Mix for 1- 2 minutes with the Sesame Seeds and fresh courgette ribbons. Serve Cod Loins on top of the Wok Veg Mix and garnish with chopped spring onions, fresh coriander leaves and 2 to 3 spoonfuls of marinade.
